Maple Pecan Sausage Casserole

INGREDIENTS |
- 1 (10-ounce) package sausage links

1 (16-ounce) loaf raisin bread, cubed

1/2 cup finely chopped dried apricots

6 eggs
-
3 cups half-and-half or milk

4 tablespoons maple syrup, divided

1/2 teaspoon pumpkin pie spice

1 cup chopped pecans
-
3/4 cup firmly packed light brown sugar

1/3 cup butter or margarine, softened

Strawberries, mint sprigs for garnish

INSTRUCTIONS |
In a large skillet, brown sausage links until they’re no longer pink, (about 12 minutes); drain and cut into bite-size pieces. Place sausage pieces in baking dish; add cubed raisin bread and apricots; toss to mix. In a large bowl, whisk together eggs, half-and-half, two tablespoons maple syrup, and pumpkin pie spice; blend well and pour over sausage mixture. In a medium bowl, combine pecans, sugar, butter, and remaining 2 tablespoons maple syrup; blend well and spoon over top of casserole. Bake, uncovered, for 30 to 40 minutes or until knife inserted in center comes out clean. Garnish with strawberries and mint sprigs.
