Herbed Garlic Potatoes

INGREDIENTS |
- 15 small red potatoes (about 2 pounds)

1/3 cup butter or margarine

1/4 cup minced fresh parsley
-
2 tablespoons minced fresh or dried chives

1 teaspoons minced fresh tarragon or teaspoon dried
-
2 to 3 garlic cloves, minced
-
1 teaspoon salt
-
1/4 teaspoon pepper
-
3 bacon strips, cooked and crumbled

INSTRUCTIONS |
Cut potatoes in half and place in a saucepan; cover with water. Cover and bring to a boil; cook until tender, about 15 minutes. Drain well. Melt butter in a large skillet. Add parsley, chives, tarragon, and garlic; cook and stir over low heat for one to two minutes. Add drained potatoes, salt, pepper, and bacon; toss to coat. Cook until heated through, about five minutes Yield: Six to eight servings.
