Cucumber Kim-Chee

INGREDIENTS |
- 2 medium cucumbers

2 medium carrots
-
1 bunch green onions (about 6 small ones)

1 tablespoon Accent seasoning
-
1 teaspoon salt

1 garlic clove, crushed
-
1 tablespoon red pepper (American or Korean)

INSTRUCTIONS |
Cut unpeeled cucumbers length-wise and slice thinly. Grate carrots and chop onions. Add to cucumbers; stir. Add remaining ingredients and stir. Refrigerate for one hour. Serve as a side dish or on top of rice. Adjust red pepper if you don’t want the mixture hot.
