Apricot Snowballs

INGREDIENTS |
- 2 cups cornflakes, crushed

1/3 cup (8-10) diced pitted dates or prunes

2/3 cup (16-20) diced dried apricots

1/2 cup chopped pecans

1/4 cup honey

1 cup smooth peanut butter

3 tablespoons butter
-
1 teaspoon vanilla

Granulated sugar

INSTRUCTIONS |
Stir together cornflakes, dates or prunes, apricots, and pecans; mix well. In a small pan, melt honey, butter, and peanut butter; blend in vanilla. Pour over cornflake mixture and mix thoroughly. Chill 30 minutes. Form into balls (about 1 tablespoon in each). Roll in sugar and chill.
