Meats & Seafood - Sweet and Sour Pork



INGREDIENTS
  • 2 tablespoons shortening
  • 1 1/2 pounds lean pork shoulder, cut into 2-x-2-inch strips
  • 1/2 cup water
  • 1 large can pineapple chunks
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1/4 cup vinegar
  • 2 to 3 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1 small green bell pepper, cut in strips
  • 1/4 cup thinly sliced onion

INSTRUCTIONS
Heat shortening and brown pork. Add water; cover and simmer without boiling until tender, about one hour.
Drain pineapple, reserving syrup. Combine brown sugar and cornstarch; add pineapple syrup, vinegar, soy sauce, and salt. Add to pork. Cook and stir until sauce thickens. Add pineapple chunks, green pepper strips, and onion slices. Cook for two to three minutes.
Serve over hot, fluffy rice and pass extra soy sauce.
Yield: Seven servings.
