Recipe of the Month Desserts - Monkey Bars

  • 1 cup coarsely chopped walnuts
  • 1/4 cup flaked coconut
  • 1/4 cup butter or margarine
  • 1 (10-ounce) bag marshmallows
  • 2 tablespoons unsweetened baking cocoa
  • 6 cups Cocoa Puffs cereal
  • 1 cup coarsely crushed dried banana chips

Heat oven to 350°. Coat a 13-x-9-inch pan with cooking spray. Spread walnuts on ungreased cookie sheet that has sides and bake for five minutes; remove from oven. Stir in coconut and return to oven; bake an additional four to six minutes or until coconut is light golden brown, stirring twice during baking; set aside to cool.
In a four-quart saucepan or Dutch oven, melt butter over medium heat; add marshmallows and cook four to six minutes, stirring constantly, until melted. Stir in cocoa, and mix until well blended. Remove from heat.
Stir in cereal, banana chips, and walnut-coconut mixture; mix until evenly coated. Pour into prepared pan; spread evenly, pressing down lightly. Cool 30 minutes and cut into bars.
Yield: 12 bars.
