Desserts - Floating Fruit Parfaits

  • 1/2 cup sliced strawberries
  • 3/4 cup boiling water
  • 1 (4-serving-size) package sugar-free strawberry gelatin
  • 1/2 cup cold water
  • 3/4 cup ice cubes
  • 1 cup plus 6 tablespoons light whipped topping, thawed

Divide strawberries among six parfait glasses. Stir boiling water into gelatin until dissolved. Stir in cold water and ice cubes until ice melts. Pour 3/4 cup gelatin over strawberries in glasses. Refrigerate for 20 minutes until set but not firm. Stir whipped topping into remaining gelatin with whisk until smooth. Spoon over gelatin in glasses. Refrigerate for one hour.
Yield: Six servings, each with 2 grams fat, 6 grams carbohydrates, and 1 gram protein.
