Salads - Fresh Cranberry Salad



INGREDIENTS
  • 1 pound fresh cranberries
  • 1 cup sugar
  • 2 (3-ounce) boxes strawberry gelatin
  • 1 1/2 cups boiling water
  • 1 1/4 cups cold water
  • 1 (8-ounce) can crushed pineapple, drained and juice reserved
  • 1 small apple, peeled and chopped
  • 1 small apple, unpeeled and chopped
  • 1 1/2 cups red grapes, seeded and chopped
  • 1 orange, peeled and chopped
  • 1/2 cup pecans, chopped

INSTRUCTIONS
Grind cranberries and add sugar; set aside. Mix gelatin with boiling water; add cold water and reserved pineapple juice (water and juice should equal 3 cups). Add cranberries and other ingredients to gelatin.
Pour into a 9-x-13-inch casserole dish. Stir occasionally while salad is congealing to prevent fruits from rising to the top.
