Fresh Cranberry Salad

INGREDIENTS |
- 1 pound fresh cranberries

1 cup sugar

2 (3-ounce) boxes strawberry gelatin

1 1/2 cups boiling water

1 1/4 cups cold water

1 (8-ounce) can crushed pineapple, drained and juice reserved

1 small apple, peeled and chopped

1 small apple, unpeeled and chopped
-
1 1/2 cups red grapes, seeded and chopped

1 orange, peeled and chopped
-
1/2 cup pecans, chopped

INSTRUCTIONS |
Grind cranberries and add sugar; set aside. Mix gelatin with boiling water; add cold water and reserved pineapple juice (water and juice should equal 3 cups). Add cranberries and other ingredients to gelatin. Pour into a 9-x-13-inch casserole dish. Stir occasionally while salad is congealing to prevent fruits from rising to the top. |
