Apple Duffy Cake

INGREDIENTS |
- 3 eggs

2 cups sugar

1 1/2 cups vegetable oil

2 teaspoons vanilla extract

3 cups all-purpose flour

3 teaspoons baking soda

1 teaspoon salt

3 cups apples, peeled and chopped

1 cup flaked coconut
-
1 cup raisins
-
1 cup black walnuts, chopped

Glaze:
-
1 cup light brown sugar
-
1/4 cup milk
-
1 stick butter or margarine

INSTRUCTIONS |
Cream together eggs, sugar, vegetable oil, and vanilla. In another bowl, sift together flour, soda, and salt. Add to creamed mixture. Add apples, coconut, raisins, and walnuts; stir well. Pour into a greased tube pan. Bake for 11/2 to 2 hours at 350° or until tester comes out clean. Combine brown sugar, milk, and butter in a saucepan over moderate heat; bring to a boil. While the cake is still cooling in the pan on a rack, pour glaze over cake. Leave cake in pan until cool, then gently remove. |
