Desserts - Cherry Walnut Pudding

  • Pudding:
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 egg
  • 1 tablespoon butter, melted
  • 1 cup sour cherries, pitted
  • 1 cup walnuts, chopped
  • Butter sauce:
  • 1 pint half-and-half
  • 1 1/4 pounds butter
  • 1 cup sugar
  • Cornstarch
  • 1 tablespoon vanilla

Combine 2 cups sugar, flour, baking soda, egg, and 1 tablespoon butter; mix until crumbly. Add cherries, using just enough juice to make a stiff batter. Add walnuts. Pour into a 9-x-9-inch pan and bake at 350° for 35 to 40 minutes.
To make sauce, combine half-and-half, butter, and sugar and bring to a boil. Thicken with cornstarch to a medium thickness. Add vanilla. Pour over cherry mixture when done.
