Grandmother Mays’ Raisin Pie

INGREDIENTS |
- 1 cup raisins

1 cup sugar

3 eggs, beaten

2 tablespoons butter, melted

1/2 teaspoon cinnamon
-
1/2 teaspoon nutmeg

2 tablespoons lemon juice
-
1/3 cup chopped nuts (pecans are good)

INSTRUCTIONS |
Cover raisins with hot water for about 15 minutes to plump and soften them; drain well. Beat together eggs and sugar. Stir in melted butter. Add spices, raisins, and lemon juice, stirring to combine. Add nuts last. Pour into unbaked pie shell and bake at 375° for 35 to 40 minutes. “This is my grandmother’s recipe for raisin pie that she has handed down to me. This is an unexpected pie to serve during holidays. It is a tasty pie, but very rich.” |
