Desserts - Peaches and Cream Rice Dessert

  • 3 cups cooked rice
  • 3 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 (1-pound, 13-ounce) can sliced peaches, drained
  • 2 tablespoons sugar
  • 1 cup sour cream
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon ground cinnamon

Combine rice, milk, 1/2 cup sugar, and salt; bring to a boil over medium heat. Cook for 15 minutes, stirring frequently. Combine eggs and vanilla; blend a little rice mixture into eggs. Gradually stir eggs into rice mixture. Cook one minute. Spoon into a greased ovenproof dish.
Arrange peaches over pudding. Sprinkle with 2 tablespoons sugar. Broil until sugar melts (about 4 or 5 minutes), watching carefully to prevent burning. Remove from oven and top with sour cream. Sprinkle with brown sugar and cinnamon.
