Breads, Rolls, and Muffins - Zucchini Bran Pizza



INGREDIENTS
  • 3 medium zucchini, grated and squeezed dry
  • 1 cup bran
  • 1/2 cup black olives, pitted and sliced
  • 1/4 cup onion, chopped
  • 1/4 cup green pepper, chopped
  • 1 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/4 teaspoon salt
  • 2 eggs, well beaten
  • 2 cups mozzarella cheese, grated
  • 1/8 teaspoon garlic powder
  • 2 tablespoons butter or margarine, melted
  • 1 large tomato, thinly sliced

INSTRUCTIONS
Preheat oven to 450°. Grease a 9-inch pie plate. In a medium bowl, combine 2 cups zucchini, 1/4 cup bran, olives, onions, green pepper, 1/2 teaspoon oregano, basil, salt, and eggs. Spread into pie plate. Bake for eight minutes and remove from oven. Lower oven temperature to 350°.

In a medium bowl, combine 1/4 cup mozzarella cheese, remaining bran, oregano, garlic powder, and butter or margarine. Sprinkle 1/2 cup of mixture over baked zucchini crust. Top with remaining mozzarella cheese and tomato slices. Sprinkle remaining zucchini around outer edge. Sprinkle remaining bran mixture inside zucchini. Bake pizza for 20 to 25 minutes or until set.
