Salads - Sweet Potato Salad



INGREDIENTS
  • 3 pounds sweet potatoes, cooked, peeled, and cubed
  • 1 cup sweet red pepper, chopped
  • 1/2 cup onion, chopped
  • 1 1/2 cups mayonnaise
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon hot pepper sauce

INSTRUCTIONS
Mix potatoes, red pepper, and onion. Add mayonnaise, salt, pepper and hot sauce. Pour over potatoes. Toss, cover, then refrigerate for one hour.
Yield: Six servings.
