Desserts - Chocolate-Covered Pecan Cremes Pecan Cremes

  • 1 can sweetened condensed milk
  • 1 stick butter or margarine
  • 2 teaspoons vanilla extract
  • 2 (1-pound) boxes powdered sugar
  • 4 cups pecans, finely chopped
  • 1 can flaked coconut
  • 15 ounces semisweet chocolate chips
  • 1 (2-x-2-inch) block of paraffin
  • 2 tablespoons cooking oil

Whip milk and butter until thick and smooth. Add powdered sugar and vanilla; stir until well blended. Add pecans and coconut and mix well. Form into small balls. Allow to chill for at least one hour in refrigerator.
Melt chocolate chips, paraffin, and oil in a double boiler over hot (but not boiling) water. Dip candy balls in melted chocolate mixture. Place on waxed paper to cool. Store candy in a tightly covered container in the refrigerator or cool place.
