Cinnamon Rolls

INGREDIENTS |
- Batter:

1 tbsp. sugar

1 tbsp. instant yeast

¼ cup warm water

1 cup room temperature milk
-
1/3 cup vanilla instant pudding mix

1 egg, beaten
-
1 tsp. salt
-
½ cup butter, divided
-
3 to 3½ cups all-purpose flour

Icing:
-
1 ½ cups powdered sugar
-
½ cup butter, softened
-
2 tsps. vanilla
-
2 tsps. water

INSTRUCTIONS |
Soak yeast and sugar in warm water. Beat pudding mix in milk and let set 1 minute. Combine pudding, yeast mixture, ¼ cup melted butter, egg, salt, and 2 cups flour. Mix until smooth. Stir in rest of flour and cover. Let rise in warm place for 1 hour. Roll out and spread with remaining ¼ cup softened butter, 1/3 cup packed brown sugar, and 1½ tsp cinnamon. Roll up and cut with thread approximately 1 inch thick or less. Place on 12-x-17-inch greased pan and flatten with your hand. Bake at 350º for 15 to 20 minutes. Let cool before spreading the icing. Note: If the dough ends up too sticky to roll up, put on floured surface and fold over several times, just before rolling out. |
