Desserts - Oatmeal Cookies



INGREDIENTS
  • 1 cup margarine
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 beaten eggs
  • 1 teaspoon vanilla
  • 3/4 cup sifted all-purpose flour
  • 3 cups uncooked rolled oats
  • 1/2 cup finely chopped walnuts
  • 1 teaspoon salt
  • 1 teaspoon baking soda

INSTRUCTIONS
Beat margarine and sugar together to make very fluffy. Stir in eggs and vanilla. Sift flour, salt, and baking soda; mix into creamed mixture. Stir in the rolled oats and chopped nuts.
Form into a roll, wrap in wax paper or plastic wrap, and freeze until firm. Slice about 1/4-inch thick and bake on parchment-lined baking sheet in a moderate oven at 350 to 375ยบ, for 10 to 20 minutes. Space well apart as these cookies spread.
Bake cookies one sheet at a time, until brown.
Cool on parchment paper until crisp.
This cookie can take a little practice to bake correctly. You can bake a sheet at a time or all at once. Store baked cookies in an air-tight container.
