Poultry and Eggs - Chicken Cacciatore



INGREDIENTS
  • 2- to 3-pound chicken fryer or broiler, cut up
  • 1/4 cup shortening
  • 1/2 cup flour
  • 2 cups onion, sliced into rings
  • 1/2 cup green pepper, chopped
  • 2 cloves garlic, crushed
  • 1 (20-ounce) can tomatoes, drained
  • 1 can sliced mushrooms (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon oregano

INSTRUCTIONS
Wash and pat dry chicken pieces. Melt shortening in skillet. Coat chicken pieces in flour and cook in shortening over medium heat for 15 to 20 minutes or until light brown. Remove chicken and set aside. Add onion rings, pepper, and garlic in pan and cook over medium heat until tender. Stir in rest of ingredients, then add chicken. Cook 30 to 40 minutes or until chicken is thoroughly cooked.
