Breads, Rolls, and Muffins - Banana Oatmeal Bread



INGREDIENTS
  • 1/3 cup uncooked quick
  • cooking oats
  • 1/4 cup buttermilk
  • 1/2 cup solid shortening
  • 1/2 cup granulated sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

INSTRUCTIONS
Combine oats and buttermilk; set aside. Cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in bananas and oat mixture. Combine flour, baking powder, and salt; stir into banana mixture. Spoon batter into a greased 9x5x3-inch loaf pan. Bake at 350ยบ for 1 hour and 10 minutes or until done.
