Marinated Tomatoes

INGREDIENTS |
- 4 to 6 large tomatoes, each cut into 6 chunks

2 cucumbers, sliced

3 tablespoons chopped fresh parsley

1 tablespoon sugar

1 teaspoon seasoned salt

1/2 teaspoon ground pepper

3/4 teaspoon dried thyme (this is the “key”)

3/4 cup vegetable oil
-
1/2 cup red wine vinegar
-
1 sweet onion, chopped

INSTRUCTIONS |
Slice tomato chunks and place in a colander to drain. In a large bowl, combine all remaining ingredients except tomatoes and cucumbers; whisk well. Allow to stand for 10 minutes plus, stirring occasionally. You will not believe how good this is! |
