Sour Cream Raisin Bars

INGREDIENTS |
- 2¾ cups quick oats

2¾ cups flour

1½ cups brown sugar

1½ teaspoons soda

1 cup plus 5 tablespoons butter or margarine

½ cup chopped pecans

Filling:
-
4 egg yolks
-
1¼ cups white sugar
-
1 tablespoon cornstarch

2 cups sour cream
-
2 cups raisins

INSTRUCTIONS |
Combine oats, flour, brown sugar, soda, butter or margarine, and pecans. Pat 2/3 of crumb mixture into a greased jelly-roll pan. Bake at 350º for 15-20 minutes. Cool. In a saucepan, combine egg yolks, white sugar, cornstarch, sour cream, and raisins. Boil five to 10 minutes, stirring constantly. Pour over crumb layer; cover with remaining crumbs. Bake at 350º for 20 minutes. Cut into bars. |
