Desserts - Upside-Down Raisin Cake

  • 2/3 cup white sugar
  • ¼ cup shortening
  • 1 egg
  • 1/3 cup milk
  • 1 cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup raisins
  • ¾ cup brown sugar
  • 1½ cups boiling water

Cream together sugar, shortening, and egg; add milk. Add sifted dry ingredients and raisins; mix well. Pour into an 8½-x-11-inch pan. Mix brown sugar and boiling water; slowly pour over batter. Bake at 350º for 35 to 40 minutes.
Serve warm with ice cream, whipped topping, or cold milk.
