Desserts - Broccoli Cheese Pie

  • 6 cups water
  • 21/2 teaspoons salt, divided
  • 3 ounces uncooked macaroni, about 3/4 cup
  • 1 egg yolk
  • 2 tablespoons snipped chives, divided
  • 1 cup shredded Cheddar cheese
  • 1 (10-ounce) package frozen chopped broccoli
  • 4 eggs
  • 1 egg white
  • 1 cup creamed cottage cheese
  • Paprika

Preheat oven to 375º. In a saucepan, heat water and 1 teaspoon salt to boiling; stir in macaroni. Boil five to eight minutes until tender. Drain; rinse in cold water. Beat egg yolk; stir in macaroni and 1 tablespoon chives. Press mixture against sides and bottom of greased 9-inch pie plate with back of spoon. Bake 10 minutes; remove from oven. Cool 10 minutes.
Increase oven temperature to 425º. Sprinkle Cheddar cheese over crust. Prepare broccoli as directed on package using 1/2 teaspoon salt; drain. Arrange broccoli on cheese. Beat eggs, egg white, cottage cheese, 1 tablespoon chives, and 1 teaspoon salt; pour over broccoli. Sprinkle with paprika. Bake, uncovered, for 15 minutes. Reduce heat to 300º. Bake for about 30 minutes or until knife inserted one inch from the edge comes out clean. Cool 10 minutes before serving.
