Desserts - Grandson’s Favorite Peanut Butter and Jelly Cook



INGREDIENTS
  • ¼ cup brown sugar
  • ½ cup butter or cholesterol-free margarine
  • 2 egg whites
  • ½ cup peanut butter
  • 1¼ cups oat bran
  • 1 cup unbleached all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon soda
  • 1/3 cup pure unsweetened grape jelly

INSTRUCTIONS
Cream together brown sugar, butter or margarine, egg whites, and peanut butter. Stir in oat bran, flour, baking powder, and soda. Roll into 1-inch balls. Make a thumbprint in the center of each cookie. Fill the indentation with a small amount of jelly. Bake at 350º for 12-15 minutes.
Yield: 36 cookies.
