Double Peanut Butter Cookies

INGREDIENTS |
- 2¾ cups flour

1 cup sugar

¾ teaspoon baking soda

½ teaspoon salt

1 cup shortening

1 cup creamy peanut butter
-
½ cup light corn syrup
-
2 tablespoons milk

Peanut butter for filling

INSTRUCTIONS |
Sift together dry ingredients. Cut in shortening and peanut butter until mixture resembles coarse meal. Blend in syrup and milk. Shape into a 2-inch roll; chill. Slice dough 1/8-inch to ¼-inch thick. Place half the slices on the cookie sheet; spread each with 1 teaspoon peanut butter. Cover with remaining slices; seal edges with fork. Bake at 350º for about 12 minutes. Cool slightly, remove from sheet. Yield: Four dozen. |
