Three-Cheese Mashed Potatoes

INGREDIENTS |
- 4 large potatoes, peeled and cubed

1 cup sour cream

4 ounces cream cheese, softened

1/2 stick butter, softened

2/3 cup milk

1/2 cup shredded Cheddar cheese

1/2 cup shredded Muenster cheese

11/2 teaspoons salt

1/2 teaspoon pepper

INSTRUCTIONS |
Cook potatoes in boiling water until tender; drain. Beat potatoes and next three ingredients at medium speed with mixer until smooth. Stir in milk and remaining ingredients. Spoon into 8-x-8-inch baking dish lightly coated with cooking spray. Bake uncovered at 400ยบ for 15 to 20 minutes or until thoroughly heated. Note: May be prepared ahead of time and refrigerated. If so, let it sit at room temperature for 30 minutes before baking. |
