Old-Fashioned Cracker Pudding

INGREDIENTS |
- ¾ cup sugar

Pinch of salt

3 eggs, separated

2 cups milk

1 cup crushed crackers

½ cup flaked coconut

1¼ teaspoons vanilla, divided

INSTRUCTIONS |
Combine first four ingredients in a medium saucepan; mix well. Add crackers and coconut. Cook over medium heat, stirring constantly, until mixture thickens. Stir in 1 teaspoon vanilla. Spoon into a 10-x-6-x-2-inch baking dish. Beat egg whites, at room temperature, and a pinch of salt until foamy. Add sugar, 1 tablespoon at a time. Beat until stiff peaks form. Add ¼ teaspoon vanilla and beat until blended. Spread meringue over pudding. Garnish with additional coconut. Bake at 350º for 12 minutes or until golden brown. |
