Desserts - Orange Pie



INGREDIENTS
  • 2 cups sugar, divided
  • 3 tablespoons cornstarch
  • 3 tablespoons plain flour
  • 1/4 teaspoon salt
  • 1/2 cup orange juice concentrate
  • 3 tablespoons lemon juice
  • 11/2 cups water
  • 2 tablespoons butter
  • 4 eggs, separated
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 (9-inch) pie shell, baked

INSTRUCTIONS
Mix dry ingredients in saucepan, reserving 1/2 cup sugar for the topping. Add the three liquids over medium heat; bring to a boil. Whisk in butter until smooth; remove from heat. Beat egg yolks, gradually adding a little orange mixture. Pour yolks into pan and heat on low, whisking often, for five minutes or until thick. Pour into shell. Preheat oven to 350ยบ.
Beat egg whites, vanilla, and cream of tartar until soft peaks form. Gradually add sugar to form stiff peaks. Spread on pie to edges. Bake for 10 minutes. Cool and enjoy!
