Cakes and Pies -
Orange Slice Cake

INGREDIENTS |
- 3½ cups plain flour, divided
-
1 pound orange slice candy, cut into small pieces (reserve 3 slices for garnish)

1 (8-ounce) package chopped dates or figs

2 cups chopped pecans

1 cup flaked or shredded coconut

¾ cup raisins
-
1 (4-ounce) package candied cherries
-
2 cups sugar
-
4 eggs
-
1 teaspoon soda
-
½ cup buttermilk
-
½ teaspoon salt

1 cup margarine or butter, melted

INSTRUCTIONS |
In a large bowl, mix ½ cup flour, candy, dates, pecans, coconut, raisins, and cherries; stir to mix; set aside. In another bowl, combine sugar, eggs, soda, and buttermilk. Stir in salt, remaining flour, and melted butter. Beat until batter is smooth. Stir in fruit and nuts; mix completely (batter will be stiff). Pour batter into a 10-inch bundt pan that has been coated with vegetable spray. Bake at 250º for 2½ to 3 hours. Remove from oven. Cool slightly on a cooling rack and pour glaze over top of cake. Yield: 10 to 12 servings. Glaze: Combine 1 cup orange juice and 2 cups sifted powdered sugar in a large bowl and beat until smooth. Pour glaze over cake and let stand overnight before serving. Keep cake in an airtight container in the refrigerator. |
