Desserts - Sweet Potatoes Rolled in Coconut



INGREDIENTS
  • 4 large sweet potatoes
  • 2/3 cup brown sugar
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla flavoring
  • 2 cups shredded sweetened coconut
  • Large marshmallows (1 per ball)

INSTRUCTIONS
Cook and mash sweet potatoes. Add brown sugar, orange juice, and flavoring. When cool enough to handle, wrap potatoes around each marshmallow and roll in coconut. Place balls in a greased baking dish. Bake at 350° for 15 to 20 minutes or until the coconut is browned.
