Coconut Pound Cake

- 11/2 cups shortening

21/4 cups sugar

5 eggs

1 cup milk

3 cups plain flour

2 teaspoons coconut flavoring

1 teaspoon baking powder

1/4 teaspoon salt

1 (7-ounce) package flaked coconut

INSTRUCTIONS |
Combine shortening and sugar. Beat in eggs, one at a time, and mix on high speed for 10 minutes. Add milk and flour alternately with other ingredients. Fold in coconut. Pour batter in a well-greased and floured 10-inch tube pan. Place pan in a cold oven and turn the heat to 325ยบ. Bake for 1 hour and 25 minutes. Cool for a few minutes and remove from pan. |
