Salads - Garlic Pesto Salad



INGREDIENTS
  • 1 box bowtie pasta
  • 1/2 pound bacon
  • 1 small jar sundried tomatoes, chopped
  • 1 small red bell pepper, chopped
  • 1 small can Mexican diced tomatoes, drained
  • 3 cloves garlic, minced, divided
  • 3 tablespoons pesto

INSTRUCTIONS
Cook pasta and drain. Cut bacon in 1-inch pieces and cook until lightly browned; drain. Place pasta in large bowl. Add tomatoes, pepper, 2 cloves minced garlic, bacon, and pesto; mix together. Sprinkle remaining garlic on top and mix again.
