Appetizers - Sweet Potato Balls



INGREDIENTS
  • 6 medium sweet potatoes
  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup pecans or walnuts, chopped
  • 2 cups corn flakes, crushed
  • 12 large marshmallows

INSTRUCTIONS
Boil potatoes, peel and mash. Mix well with butter, sugar, and nuts. Form a ball around one marshmallow; roll in crushed corn flakes. Repeat with remaining marshmallows.
Just before serving, warm balls in a 350ยบ oven for 15 minutes or until marshmallows have softened or melted. These can be made ahead of time and refrigerated or frozen.
