Salads - Guacamole (Avocado Salad)



INGREDIENTS
  • Minced garlic
  • 1 small tomato, finely chopped
  • 1 very small onion, peeled and minced
  • 6 avocados
  • 21/2 teaspoons salt
  • 2 teaspoons lemon juice
  • 2 tablespoons mayonnaise
  • 1 teaspoon salad oil
  • 4 drops hot sauce
  • Shredded lettuce

INSTRUCTIONS
About a half hour before serving, place tomato and onion in a medium bowl rubbed with minced garlic. Cut avocados in half, remove pits, and scoop out the flesh. Chop avocado into small pieces; add to bowl. Add salt, lemon juice, mayonnaise, salad oil, and hot sauce. Toss until blended. Arrange on a large bed of shredded lettuce and serve as a salad.
