Desserts - Skillet Cookies

  • 2 eggs
  • 1 cup sugar
  • 2 level tablespoons butter or margarine
  • 6 ounces chopped dates
  • 2 cups Rice Krispies
  • 1 teaspoon vanilla
  • 1 1/4 cups chopped pecans
  • Flaked coconut

Combine eggs, sugar, butter or margarine, and dates in a black iron skillet and cook on medium heat until dates are almost melted and mixture thickens. Stir constantly so eggs won’t scramble.
Remove from heat and add Rice Krispies, vanilla, and pecans. Let cool enough to handle. Drop a spoonful at a time in flaked coconut and roll in a ball. Store in an air-tight container. Cookies do not need to be refrigerated.
