Recipe of the Month Breads, Rolls, and Muffins - Cowboy Cornbread



INGREDIENTS
  • 1 pound bacon, fried and crumbled
  • 1 can MexiCorn, drained
  • 1/4 cup oil
  • 2 cups shredded Cheddar cheese
  • 2 cups taco-flavored shredded cheese
  • 2 1/2 cups self-rising cornmeal
  • 1 1/2 cups milk
  • 2 eggs

INSTRUCTIONS
Preheat oven to 425ยบ. Mix all ingredients except for cheeses. Spoon half the mixture into heated and oiled iron skillet. Put Cheddar cheese on top of mixture. Cover with remaining mixture. Bake for 25 to 30 minutes.
Turn oven on broil and sprinkle taco-flavored cheese on top of cornbread. Put under broiler for a few minutes until cheese melts.
