Pancakes and Waffles - Pears Pancake Pleaser

  • 1 (16-ounce) can pear halves
  • 2 cups pancake mix or pre-made frozen pancakes
  • 3 cups cottage cheese
  • 1/2 cup chopped pecans
  • Marmalade Sauce:
  • 3/4 cup pear syrup
  • 1 cup orange marmalade
  • 1 tablespoon cornstarch
  • 1/4 teaspoon mace

Drain pears, reserving syrup. Cut pears into quarters.
If using pancake mix, prepare according to directions on package. Make four 8-inch pancakes or heat four pre-made pancakes.
Mix cottage cheese with pecans. Stack pancakes, layering with cottage cheese mixture. Arrange pear quarters in a fan shape on top of stack.
Combine sauce ingredients and cook until thickened. Pour over pancake stack and cut in wedges to serve.
Yield: Six servings.
