Meats & Seafood - Oven-Baked Chicken Strips with Honey Mustard Sauc



INGREDIENTS
  • 1/4 cup honey
  • 2 tablespoons butter, melted and cooled
  • 2 tablespoons prepared mustard
  • 1 tablespoon frozen orange juice concentrate,
  • undiluted
  • 1/8 teaspoon curry powder
  • Few drops hot sauce, to taste
  • 2 pounds chicken planks or strips
  • Salt and pepper to taste
  • Vegetable oil

INSTRUCTIONS
Preheat oven to 350º. In a small mixing bowl, combine the honey, butter, mustard, orange juice concentrate, curry powder, and hot sauce. Set aside.
Salt and pepper the chicken strips and coat lightly with vegetable oil; set aside.
Spray a baking dish (large enough to hold the chicken strips in a single layer) with cooking spray. Place chicken strips in the container and cover with half of the honey mustard sauce.
Bake chicken at 350º for 15 minutes. Remove from oven. Turn chicken strips over. Spoon the remaining sauce over the chicken strips. Return chicken to the oven and bake until lightly brown and well cooked, about 15 minutes. Serve hot or cold.
Yield: Eight servings.
