Recipe of the Month Fruits and Vegetables - Tomato Garden Medley



INGREDIENTS
  • 3 large red tomatoes, roughly chopped
  • 3 large yellow tomatoes, roughly chopped
  • 4 pickling cucumbers, coin-sliced
  • 1 or 1 1/2 large Vidalia onions, strip-sliced
  • 1 green sweet pepper, strip-sliced
  • 1 1/2 tablespoons sugar
  • 1/2 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt (garlic salt preferred)
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 1 teaspoon chopped fresh parsley

INSTRUCTIONS
Combine vegetables in a large serving bowl. Mix together sugar, oil, and red wine vinegar; add seasonings and herbs. Pour over vegetables and toss. Allow mixture to stand five to 10 minutes. Stir well and serve.
