Fruits and Vegetables -
Tomato Garden Medley

INGREDIENTS |
- 3 large red tomatoes, roughly chopped

3 large yellow tomatoes, roughly chopped

4 pickling cucumbers, coin-sliced

1 or 1 1/2 large Vidalia onions, strip-sliced

1 green sweet pepper, strip-sliced
-
1 1/2 tablespoons sugar

1/2 cup vegetable oil
-
1/4 cup red wine vinegar
-
1 teaspoon salt (garlic salt preferred)

1 teaspoon black pepper

2 teaspoons dried thyme
-
1 teaspoon chopped fresh parsley

INSTRUCTIONS |
Combine vegetables in a large serving bowl. Mix together sugar, oil, and red wine vinegar; add seasonings and herbs. Pour over vegetables and toss. Allow mixture to stand five to 10 minutes. Stir well and serve. |
