Spinach Linguine with Fresh Sauce

INGREDIENTS |
- 1/2 cup extra virgin olive oil

1/2 cup lemon juice

1 teaspoon brown mustard

2 teaspoons Kosher salt

1 teaspoon black pepper

1 clove garlic, crushed

1 green bell pepper, seeded and chopped

4 Roma tomatoes, peeled, seeded, and chopped

4 green onions, chopped
-
1 tablespoon finely chopped fresh basil

1 tablespoon finely chopped fresh parsley

1 package spinach linguine

INSTRUCTIONS |
Mix together olive oil, lemon juice, mustard, salt, black pepper, and garlic. Set aside while preparing the vegetables to allow flavors to blend. In a large bowl, combine the green bell pepper, tomatoes, green onions, basil, and parsley. Mix in the lemon-olive oil dressing and set aside at room temperature while linguine is cooking. Cook the linguine according to package directions; drain. Place in a large bowl or platter and top with the fresh sauce. Garnish with parsley and green onions if desired. This can be served hot or cold. Yield: Four servings as a main dish; six to eight servings as a side dish. |
