Chocolate-Covered Cream Cheese Cookies

INGREDIENTS |
- Cookies:

1/4 cup sugar

1/2 cup unsalted butter

1 cup all-purpose flour

1/2 teaspoon vanilla

1/8 teaspoon salt

Filling:
-
1 (3-ounce) package cream cheese, softened

1 cup powdered sugar
-
2 tablespoons all-purpose flour
-
1 teaspoon vanilla

Icing:
-
1/2 cup semi-sweet chocolate chips
-
2 tablespoons butter or margarine
-
2 tablespoons water
-
1/2 cup powdered sugar

INSTRUCTIONS |
Cream sugar and butter. Beat in flour, vanilla, and salt. Roll into small balls; place on ungreased cookie sheets and push thumb in centers. Bake at 300° for 20-30 minutes (they will not brown). Mix cream cheese with powdered sugar, flour, and vanilla until smooth. Fill thumb holes of cookies while still warm. Melt chocolate chips; add butter or margarine and water. Blend over low heat. Stir in sugar. Frost cookies on top of cream cheese filling. |
