Desserts - Banana Nut Ice Cream



INGREDIENTS
  • 6 Junket rennet tablets
  • 1/4 cup cold water
  • 2 cups sugar
  • 6 cups whole milk
  • 4 cups heavy whipping cream
  • 6 teaspoons vanilla
  • 3 medium ripe bananas
  • 1 cup chopped pecans
  • 4 tablespoons butter

INSTRUCTIONS
Dissolve rennet tablets in cold water by crushing. Set aside. Combine whole milk, cream, and sugar in a saucepan. Heat, while stirring, to lukewarm (110° F.).

Stir in dissolved rennet tablets and quickly pour in freezer canister of home ice cream maker. Let stand undisturbed for 10 minutes. Cool.

While mixture is cooling, melt butter in iron skillet. Add chopped pecans and toast, stirring constantly over medium heat. Mash bananas well; add toasted nuts and bananas to cooled milk mixture.

Freeze in ice cream maker according to manufacturer’s directions. Makes 4 quarts.
