Raisin Cream Pie

INGREDIENTS |
- ¼ cup raisins

3 tablespoons water

3 cups milk, divided

¼ cup white sugar

½ cup brown sugar

5 tablespoons cornstarch

2 cups whipping cream

1 tablespoon lemon juice

2 large eggs
-
¼ teaspoon salt
-
1 teaspoon vanilla
-
1 tablespoon butter
-
½ teaspoon cinnamon
-
1 (9-inch) pie shell, baked

Whipped topping

INSTRUCTIONS |
Cook raisins with water for five minutes; cool. Heat 2½ cups milk and sugars. Blend eggs, salt, cornstarch, and remaining ½ cup milk in blender. Slowly stir into hot milk with a wire whisk. Stir constantly until thick; do not allow to boil. Remove from heat; add vanilla, butter, cinnamon, and raisins with water. Cool. Spread into pie shell and cover with whipped topping.
