Recipe of the Month Desserts - Peppermint Candy Popcorn



INGREDIENTS
  • 8 quarts plain popped popcorn
  • 1 cup butter or margarine
  • ½ cup light corn syrup
  • 1 package peppermint candies or box of candy canes, crushed

INSTRUCTIONS
Place popcorn in a large bowl and set aside. In a saucepan, combine butter, corn syrup, and candies. Bring to a boil over medium heat, stirring constantly. Boil for five minutes, stirring occasionally. (It is OK if some candy pieces do not completely melt!)
Pour over popcorn and mix thoroughly. Turn into a large, greased turkey roasting pan. Bake at 250° for one hour, stirring every 15 minutes. Pour hot popcorn on waxed paper to cool. Break apart and store in air-tight bags.
Yield: 8 quarts.
