Spiced Muskmelons

INGREDIENTS |
- 2 medium muskmelons

1 tablespoon salt
-
4 cups sugar
-
1 cup vinegar
-
3 cups water
-
2 teaspoons salt
-
2 tablespoons whole cloves

INSTRUCTIONS |
Peel and wash muskmelons. Over the top of melons, pour 1 tablespoon salt and enough hot water to cover. Scald for five minutes; drain. Combine sugar, vinegar, 3 cups water, 2 teaspoons salt, and cloves. Boil for 10 minutes. Add melons and boil for one hour. Cool before serving. Yield: four to five quarts.
