Cauliflower Au Gratin

INGREDIENTS |
- 1/2 cup chopped onion

1/2 cup chopped green bell pepper

1/4 cup butter

3 tablespoons flour

Salt and pepper to taste

2 cups canned tomatoes, partially drained and chopped

3 cups cooked, chopped cauliflower

1/2 cup shredded Cheddar cheese

INSTRUCTIONS |
n a saucepan, sauté onion and green pepper in butter until tender. Stir in flour, salt, and pepper. Cook for several minutes; add tomatoes. Cook until thickened, stirring constantly. Add cauliflower and cook until heated through. Spoon into a baking dish and top with cheese. Bake at 350° for 20 minutes or until cheese is melted.
