Fruits and Vegetables - Roasted Potatoes for Two



INGREDIENTS
  • 2 tablespoons lemon juice
  • 4 teaspoons olive or vegetable oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 6 small red potatoes (about 1 pound), quartered

INSTRUCTIONS
In a medium bowl, combine lemon juice, oil, thyme, garlic salt, and pepper. Place in an 8-inch square baking dish coated with nonstick cooking spray.
Bake, uncovered, at 450ยบ for 40 minutes or until potatoes are tender, stirring occasionally.
