Roasted Potatoes for Two

INGREDIENTS |
- 2 tablespoons lemon juice

4 teaspoons olive or vegetable oil

1/2 teaspoon dried thyme

1/2 teaspoon garlic salt

1/8 teaspoon pepper

6 small red potatoes (about 1 pound), quartered

INSTRUCTIONS |
In a medium bowl, combine lemon juice, oil, thyme, garlic salt, and pepper. Place in an 8-inch square baking dish coated with nonstick cooking spray. Bake, uncovered, at 450ยบ for 40 minutes or until potatoes are tender, stirring occasionally.
