Meats & Seafood - Chicken Asparagus Bundles



INGREDIENTS
  • 8 fresh asparagus spears
  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper
  • 11/2 teaspoons olive oil
  • 1/4 teaspoon Italian seasoning
  • 1/8 teaspoon garlic salt
  • Salt and pepper to taste

INSTRUCTIONS
Trim cut ends and steam asparagus for about three minutes until crisp tender. Place chicken breasts between plastic wrap and gently pound to 1/4-inch thickness. Place four asparagus spears horizontally across each chicken breast and roll up to enclose asparagus, leaving both ends sticking out.
Slice two rings approximately 1/2 inch wide from red pepper. Slip a pepper ring around each chicken bundle and move to center to secure (leftover pepper can be chopped and frozen for later use).
Place bundles, rolled edges down, in baking dish that has been sprayed with cooking spray; brush chicken breasts and asparagus tips with olive oil. Sprinkle with Italian seasoning, garlic salt, salt, and pepper. Bake at 375ยบ for about 25 minutes or until chicken is cooked through.
