Desserts - Award-Winning Lime Squares



INGREDIENTS
  • Crust:
  • 1 cup butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • Filling:
  • 9 eggs
  • 4 cups sugar
  • 8 tablespoons all-purpose flour
  • 12 tablespoons fresh lime juice
  • 1 teaspoon lime zest

INSTRUCTIONS
Prepare crust in a 9-x-13-inch baking dish by mixing powdered sugar, salt, and flour; add melted butter and mix with a fork until combined. Press into the bottom of dish and bake at 350° for 20 minutes. Set aside to cool.
For filling, mix sugar and flour well in a large bowl; add eggs and stir well. Add lime juice and zest, and mix until combined. Pour into cooled crust and bake at 350° for 40 to 45 minutes or until set. Sprinkle top of warm bars with powdered sugar. Place pan in refrigerator to chill.
Cut into squares when ready to serve. If you wish, garnish each square with a lime slice.
