Desserts - Maple Pecan Sausage Casserole



INGREDIENTS
  • 1 (10-ounce) package sausage links
  • 1 (16-ounce) loaf raisin bread, cubed
  • 1/2 cup finely chopped dried apricots
  • 6 eggs
  • 3 cups half-and-half or milk
  • 4 tablespoons maple syrup, divided
  • 1/2 teaspoon pumpkin pie spice
  • 1 cup chopped pecans
  • 3/4 cup firmly packed light brown sugar
  • 1/3 cup butter or margarine, softened
  • Strawberries, mint sprigs for garnish

INSTRUCTIONS
In a large skillet, brown sausage links until they’re no longer pink, (about 12 minutes); drain and cut into bite-size pieces. Place sausage pieces in baking dish; add cubed raisin bread and apricots; toss to mix.
In a large bowl, whisk together eggs, half-and-half, two tablespoons maple syrup, and pumpkin pie spice; blend well and pour over sausage mixture.
In a medium bowl, combine pecans, sugar, butter, and remaining 2 tablespoons maple syrup; blend well and spoon over top of casserole. Bake, uncovered, for 30 to 40 minutes or until knife inserted in center comes out clean.
Garnish with strawberries and mint sprigs.
